Paolo Stefani began his culinary career in the kitchens of private clubs and restaurants in the Chicago area while earning both his Culinary Arts Degree and Bachelors Degree in Hospitality Management from Kendall College. After completion of his formal education, Paolo worked for Hyatt Hotels as the Food & Beverage Manager, allowing him to learn the operations aspect of the hospitality industry before returning to the culinary realm with ARAMARK. Paolo’s strong ties to the Italian culture led him to Florence, Italy where he performed a Stage at one of Italy’s top restaurants, Il Cibreo. After adhering to the culinary training and observed Italian cuisine he experienced in Italy, he assumed the role of Catering Director at Northwestern University. After developing a robust program at Northwestern University, he was selected as one of ten managers to represent ARAMARK in the 2000 Olympic Games held in Sydney, Australia. Paolo and the team were responsible for all of the catering in the corporate suites during the 2000 Summer Games. This once in a life time opportunity, revealed his true culinary passion, and in 2003 he accepted the position of Executive Chef at the James Allen Center. The Conference Center required not only elaborate cuisine but flawless execution and presentation. Paolo’s past experiences in operations as well as his culinary expertise allowed him to incorporate fabulous cuisine, remarkable presentation, and impressive room designs to create a dining experience that was always second to none.
As an active member of the National Association of Catering Executives since 1996, Paolo has held various positions including the Chicago Chapter President. Through his culinary career and undeniable passion, Paolo earned the Pro-Chef Certification from the Culinary Institute of America. Additionally as a member of the American Culinary Federation, Paolo is able to utilize all of the resources available to keep current on new industry trends and food culture.
In 2008, Paolo assumed the role of Regional Executive Chef in ARAMARK’s Midwest Region. He is currently responsible for all of the culinary programs within the Midwest Region as well as the ongoing mentoring and training of the regional chefs. Paolo also assists with numerous ARAMARK national initiatives including his current role as the National Director for Culinary Competition, ARAMARK Culinary Excellence (ACE).
