After obtaining his MCIMA in Hospitality management from Westminster College, London, Ian embarked on a long career in the hotel and food service sectors before turning to teaching at EHL.
Ian is an operator at heart. He has considerable operational experience in many aspects of the hotel, contract and the event catering sectors of the food service industry, ranging from five-star hotels to the management of national football stadiums. Prior to teaching at EHL he held multi-unit management positions with the world’s two largest contract catering companies.
Ian is particularly interested in quality management systems and in innovation in hotels and restaurants. He has considerable knowledge of quality control systems and has implemented ISO 9002 in more than twenty-five restaurants around the UK. He is also an advisor to the World Safety Food Organization.
Ian Scarth is a former winner of the Olive Barnett Award, which rewards service quality initiatives in the hospitality and food service industry , and is now a judge for the award. He has attended and spoke at conferences in the field of food service and food safety and has published articles in numerous trade magazines.
At EHL, Ian has also been involved in quality management and innovation and was active in developing the school’s “Food Court” concept in collaboration with Compass. He is also involved in developing EHL partnerships with industry. In his teaching, Ian seeks to develop industry links and organizes frequent field trips for his students. As a module leader Ian plans, manages and measures courses with his team of nine professors.
